- Rice - 3/4 Cup
- Onion - 1/2 Cup
- Beans - 1/2 Cup
- Carrots - 1/2 Cup
- Green peas - 1/2 Cup
- Cauliflower - 1/2 Cup
- Cloves - 2
- Cardamom - 2
- black pepper - 4
- Cinnamon - 1/2 inch
- Ginger paste - 1 Tsp
- Bay leave - 1
- Coriander seeds Powder -1 Tsp
- Cumin seeds powder - 1/2 Tsp
- Coriander leaves
- Mustard seeds - 1/2 Tsp
- Cumin seeds - 1/2 Tsp
- Turmeric - 1/4 Tsp
- Oil - 1 Tbsp
- Ghee - 1 Tbsp
- Salt
Procedure :
- Wash rice and Put it into boiling salted water for 8-10 minutes.
- Cut beans, carrots, cauliflower into small pieces.
- Wash and cook in microwave for 1-2 min.
- Drain rice and keep aside.
- Heat oil and ghee in a pan.
- Add mustard seeds to splutter.
- Add cumin seeds, cinnamon, Cardamom, bay leave, clove and black pepper.
- Add Onion and fry till it turns golden in color.
- Add ginger paste and fry well.
- Add turmeric and all vegetables.
- Fry well and add cumin and coriander powder.
- Add cooked rice mix well.
- Add little salt (as rice is cooked in salted water) and cover lid for 2 min.
- Garnish with finely chopped coriander leaves.
- Serve hot with Raita.
