- Split Black Gram (Urad dal)
- Split Green Gram( Mug dal)
- Rice
- Ginger Paste - 1 Tbsp
- Garlic Paste - 1 Tbsp
- Curd - 3 Tbsp
- Asafoetida- 1Pinch
- Green chili Paste -1 Tbsp
- Baking Soda - 1 Pinch
- Cumin seeds - 2 Tbsp
- Oil - 4 Tbsp
- Salt
Procedure :
- Mix urad dal, mug dal and rice in a same proportion.
- Wash and soak for 10 min.
- Drain water, spread it on a cloth.
- Dry it for 1-2 days.
- Grind the mixture in a grinder like semolina.
- You can use this flour up to 2 months by keeping it in an air tight container.
- Above ingredients are given for 1 Cup flour.
- Mix flour, curd and water to prepare thin batter.
- Keep aside for 5-6 hours.
- Add green chili paste, ginger paste and garlic paste.
- Add asafoetida, baking soda and salt.
- Grease the pan with oil.
- Pour the mixture and steam in a cooker without whistles or you can use idli stand.
- Cut it into small pieces as shown.
- Heat oil in a pan.
- Add cumin seeds to splutter in oil.
- Add dhokla pieces and fry well.
- Eat with tomato sauce or chutney.
