Khamang Dhokla


Ingredients :

  • Split Black Gram (Urad dal)
  • Split Green Gram( Mug dal)
  • Rice
  • Ginger Paste - 1 Tbsp
  • Garlic Paste - 1 Tbsp
  • Curd - 3 Tbsp
  • Asafoetida- 1Pinch
  • Green chili Paste -1 Tbsp
  • Baking Soda - 1 Pinch
  • Cumin seeds - 2 Tbsp
  • Oil - 4 Tbsp
  • Salt

Procedure :

  1. Mix urad dal, mug dal and rice in a same proportion.
  2. Wash and soak for 10 min.
  3. Drain water, spread it on a cloth.
  4. Dry it for 1-2 days.
  5. Grind the mixture in a grinder like semolina.
  6. You can use this flour up to 2 months by keeping it in an air tight container.
  7. Above ingredients are given for 1 Cup flour.
  8. Mix flour, curd and water to prepare thin batter.
  9. Keep aside for 5-6 hours.
  10. Add green chili paste, ginger paste and garlic paste.
  11. Add asafoetida, baking soda and salt.
  12. Grease the pan with oil.
  13. Pour the mixture and steam in a cooker without whistles or you can use idli stand.
  14. Cut it into small pieces as shown.
  15. Heat oil in a pan.
  16. Add cumin seeds to splutter in oil.
  17. Add dhokla pieces and fry well.
  18. Eat with tomato sauce or chutney.
